Sweet Potato & Spinach Breakfast Hash
Ingredients:
- 1 medium sweet potato, peeled and cubed
- 1/2 bell pepper, diced
- 1/4 onion, diced
- A handful of spinach
- 1 egg (or two for extra protein)
- Salt, pepper, and a pinch of smoked paprika
Instructions:
- Sauté sweet potato, bell pepper, and onion in a little olive oil until softened.
- Add spinach and cook until wilted, then season with salt, pepper, and paprika.
- Push the veggies aside, crack an egg in the pan, and cook until the yolk is set to your liking. Serve hot
