Veggie-Packed Breakfast Burrito
Ingredients:
- 1 whole-grain or spinach tortilla
- 2 eggs or 1/2 cup scrambled tofu (for a vegan option)
- 1/4 cup black beans, drained and rinsed
- 1/4 cup diced bell peppers
- 1/4 avocado, sliced
- A handful of spinach or kale
- Salsa and shredded cheese (optional)
- Salt and pepper, to taste
Instructions:
- Scramble the eggs or tofu with salt, pepper, and bell peppers until cooked.
- Lay the tortilla flat, add spinach, black beans, scrambled eggs or tofu, avocado slices, and optional cheese.
- Roll up the burrito, cut in half, and serve with salsa for dipping.
